The house pour of Havana's grandest hotel — white rum and apricot over pineapple and lime, tropical without tipping into sweet.

1. 2 ozWhite rum
2. ½ ozApricot liqueur
3. 1 ozPineapple juice
4. ½ ozLime juice
5. ¼ ozSimple syrup

Served up

Shake with ice and double strain into a chilled coupe. Garnish: Pineapple wedge.
