Pisco Sour

Peru's national drink — pisco, lime, and sugar shaken to a froth over egg white, then finished with bitters dotted across the foam.

  1. 2 ozPisco
  2. ¾ ozLime juice
  3. ¾ ozSimple syrup
  4. 1 eachEgg white
  5. 3 dashAngostura bittersDotted on the foam

Served up

Dry shake without ice, then shake hard with ice. Strain into a chilled coupe and dot the foam with bitters. Garnish: Angostura bitters on the foam.
