Queen's Park Swizzle

Trinidad's most beautiful drink — rum, lime, and mint swizzled to a frost, then capped with Angostura that bleeds down through the glass like weather.

  1. 2½ ozAged Jamaican rum
  2. ¾ ozLime juice
  3. ½ ozDemerara syrup
  4. MintA handful, muddled
  5. 6 dashAngostura bittersFloated on top

Over crushed ice

Muddle the mint with lime and syrup in a tall glass. Fill with crushed ice, add rum, and swizzle until frosted. Float the bitters over the top. Garnish: Mint and an Angostura float.
