The pink-hotel aperitif — gin brightened with pineapple, lemon, and a nutty thread of orgeat. Tropical, but with the collar buttoned.

1. 2 ozGin
2. 1 ozPineapple juice
3. ½ ozLemon juice
4. ½ ozOrgeat

Served up

Shake with ice and double strain into a chilled coupe. Garnish: Pineapple wedge.
