New Orleans's contribution to the canon: rye and Peychaud's in a glass rinsed with absinthe, no ice to get in the way. Order one and you are drinking history.
- 2 ozRye whiskey
- ¼ ozSimple syrup
- 3 dashPeychaud's bitters
- AbsintheTo rinse the glass
Served up
Rinse a chilled rocks glass with absinthe and discard the excess. Stir the rye, syrup, and Peychaud's with ice, then strain into the glass. Express the lemon twist over the top and discard. Garnish: Lemon twist (expressed and discarded).
